In The Kitchen: Obsessed with Overnight Oats

So as you all probably know, I love food. I am a self-proclaimed foodie. One of my favorite things to do is to try new restaurants in the city. Although I love eating food, I’m not the best chef out there, although Paul doesn’t complain. I enjoy baking {mostly because I get to eat the fruits of my labor}.

I am not the most innovative cook, but I decided to try my hand at overnight oats. I have seen recipes here and there {pinterest explosion} and I was really interested to try it out myself. I’m not going to toot my own horn, but they were fabulous! This meal is filling, healthy, and easy to take on the go {ideal for the busy student}.

So I present to you my take on overnight oats.


This recipe is really simple because I cannot handle anything too complicated {haha}.

  • ½-2/3 cup unsweetened almond milk {depending on how thick or thin you want it}
  • ½ cup rolled oats {I have heard that rolled oats turn out better than quick or steel cut oats}
  • 1 heaping tsp of chia seeds {hello health benefits!!}
  • 1-2 tsp of light brown sugar {depending on your morning sweet tooth}
  • 1/8-¼ tsp of cinnamon {I’m a big fan, but just a dash will work great too}


Mix it all together in a travel container. I used a glass container with the snap-on, leak-proof lid; the better to throw in my bag in the morning.

Put the lid on and let it sit in the fridge overnight, no peeking!


Look how much the oats expanded! The oats are soft and yummy and the chia seeds add an amazing texture. There is a perfect balance of sweetness and creaminess and it was very filling! I am all set to take on the day.

I plan to try out mixing in fruits, nuts, PB, Nutella and whatever else I feel like that day! I’m happy to be making more healthy breakfast choices.
