Take some time to eat outside

The weather has been absolutely beautiful here in the city. These days are few and far between so I jump on the chance to spend some time outside soaking up the sun.

I grew up in Southern California and nice weather was the norm. I definitely took it for granted. Now that beautiful days are so rare for me, I have to find a way to enjoy the weather while maneuvering through my hectic days. I am a full-time student and I am in school nearly 40 hours per week. 

I have found a way to enjoy this weather {and fits into my busy schedule} by eating outside. Lunch is often the meal that I most often rush through. I need to remind myself to sit down, give my mind a break, and enjoy a meal. I have found that by eating outside, I can recharge and reap the benefits of vitamin D.

One of my favorite lunch time meals is an assortment of cheese, cured meats, fruit, and a loaf of amazing bread – the kind of meal served at those by-the-sidewalk cafés. I try to recreate this meal at school by bringing some cubes of my favorite fragrant cheese, a couple slices of prosciutto, a handful of grapes, and a slice of locally made sourdough bread. I try to sit outside, immerse myself in my meal, and savor the sweet moments with a good book or a good friend.
